If there are 2 interpreters per booth, their audio and video are sent directly to each other bypassing the server. It is the most secure mode. An exception to that is when your 2 computers cannot create a direct connection because they are behind firewalls.
If there is more than 2 interpreters, their audio and video are sent to the server and then to each other. This server simply passes the video and audio streams to participants.
